Perfect food to eat if your in to a ketogenic lifestyle. I think my oldest son is among the ten most egg consuming people on the planet.
Super easy and a great snack or breakfast.
In the pictures I have used 1 egg per muffin, some cheese of your choice and mozzarella. Green onions, ham, salt and pepper from the grinder.
Fill up the muffin cup with all above.
Bake at 350F (175C) 8-12 minutes depending on your oven.
The muffins should look like the picture when you take them out of the oven.
Serve like they are or with a you salad of choice.
Omelettes is a great start of the day, or a great lunch. One of may favorites are filled with left over Bolognese sauce and mozzarella. Thats whats on the picture. I also like to sprinkle some fresh herbs on it while cooking just before flipping it, to get some more flavor and an attractive look. This one is sprinkled with parsley and made from 3 eggs. served with a kale feta cheese salad.

This is actually mo oldest son's recipe, but delicious..
You will need
3 eggs per person
One fresh chorizo sausage
Half a bell pepper
A table spoon of chopped onions
Butter to fry in
Fry everything except the eggs in a wok. Finish up with the eggs until you have a scramble.
