Chicken is great protein if you find the right ones.
Try to buy organic raised without antibiotics. then you will get best possible results and full flavor. When I grew up, my dad use to have chickens and ducks at our summer house. Still remember the tase from those guys.
Whole organic Chicken
One big chicken is enough for 4 hungry people. I always make two of them. Left-overs are great for the kids school lunches or just for our own next day lunch.
You will need.
2 big organic chickens.
The oven at 350F/175C
Season with garlic, paprika powder, onion powder, a hint of Indian curry, salt and pepper from the grinder.
Bake 35 minutes with the breast side down. flip them and finish with the breast side up. Bake until 165F/75C inner temp. Save the juices for the gravy. I just mix them with a lot of cream and a stick of butter, the reduce the sauce until it is the right consistence.
Served with the gravy, veggies cut in smaller pieces, boiled in salted water, chilled in ice water and finished in the micro wave in melted butter 3 minutes before serving. Also with minute pickled English cucumbers. The way I do them is just cutting in thin slices and steal some pickles juice from my burger pickles and let them pickle for a couple of minutes before serving.
