
A side is the perfect way of adding some base business to the plate without being starchy or boring. I do a lot of flavorful salads as sides. More so living in TX than when I was in Europe. But this slide will be dedicated to other types of sides.
Grilled organic carrots

You will need 200 grams of nice colorful, crispy, fresh carrots per person, cut in slices.

Salt, pepper, a dash of tiger sauce, a clove of minced garlic.

Toss the carrots in the stuff above and grill them on his temp for a couple of minutes on each side.
The perfect green asparagus

You will need 200 grams of green, crispy asparagus and 50 grams of melted butter.
-
Bring a pot of water to boil. Boil the asparagus between 30 seconds and one minute. Chill in ice water.

Dry them with a paper towel
-
Toss them in the melted butter
-
Finish with salt and pepper before microwaving 2-3 minutes.

Enjoy!
Grilled tomatoes

1 tomato per person, cut in half
-
A dash of olive oil
-
Fresh rosemary
-
Salt and pepper.
-
Just put all the stuff on the tomato, grill for 3 minutes on each side on a hot grill.

Cole slaw
-
My coleslaw is simple but taste great! Since it contains a lot of mayo, you need to ad some acidity to make it refreshing.

You will need
-
Halv a head of cabbage in thin strings
-
Two cups of amazing mayo
-
Zest and juice from one lime
-
Half a glass jar of Maille Dijon mustard
-
One ultra chopped carrot
-
One ultra chopped apple
-
Thats it! mix everything, no slat and pepper needed, the mustard takes care of that!
Sun chokes, mushrooms and green stuff
You will need 100 grams of peeled chokes, and 50 grams of quartered mushrooms per person. Also half a stick of butter and some rocket salad and baby kale.

Melt the butter, fry the chokes for 4 minutes before adding the mushrooms. let it all fry for a couple of minutes. Flavor with salt and black pepper from the grinder. finish with a hand full of baby kale and rocket salad 30 seconds before plating, just so it gets warm and don't loose its crisp.
Green cauliflower mash
The kale family can easily taste and smell a bit nasty. This recipe won't.
You'll need:

1 head of green cauliflower
-
half a cup of shredded parmesan cheese.
-
1 stick of butter
-
2 minced cloves of garlic or a big squirt of the garlic paste from :"Tricks and Tips"

Cut the cauliflower head in to smaller pieces
-
Run it in a food processor until smooth
-
Boil in water for 6 minutes
-
Chill in running cold water in a colander
-
Get rid of the water.
-
Put in a porslin pot, ad garlic, parmezan and butter. Microwave for 4 minutes before serving. See pics.
Mango pickled veggies
This is an amazing way of bringing out the best flavors in cauliflower and beans

You'll need (4 people) Marinade
-
5 tablespoons of balsamic mango vinegar
-
Zest and juice from one lemon
-
1 tablespoon of Gavcho Garo pepper. Can be substituted with any of your favorite peppers.

A hand full of chopped parsley
-
Half a cup of cold pressed extra vigil olive oil
-
Salt and black pepper from the grinder

Veggies
-
One head of yellow cauliflower
-
One head of green cauliflower
-
2 hand fulls of yellow and purple beans
-
A hand full of red cabbage in thin slices
-
Boil above in salted water, start with the cauliflower for two minutes and the beans and cabbage for one minute. Chill in ice water so they stay crispy. Get rid of all water And marinate in the above marinade for at least 4 hours.

Grilled veggies
You'll need (4 people)

4 peeled red bell peppers from a can.
-
4 red onions
-
16 Green fresh asparagus
-
4 red carrots cut in halves
-
4 small squashed in slices
-

For the marinade​
-
Half a cup of green olive oil
-
1 table spoon paprika powder
-
1 table spoon of madras curry
-
Salt and pepper from the grinder
-
Toss the veggies in the marinade and let them sit for 30 m minutes in room temp before grilling. The onions and the carrots takes 6 minutes. the bell peppers and the squash 4 and the asparagus just need 2 minutes on medium temperature. See pictures.
Grilled whole cauliflower
This dish can be a side or a full meal, one big head of cauliflower is good as a side for 4 people.
You'll need (4 people)

One head of cauliflower boiled for 5 minutes in salted water, and cooled in ice water, then. dried in a paper towel

1 stick of melted butter for brushing
-
Salt and pepper from the grinder.
-
Brush the cauliflower with butter and finish with salt and pepper from the grinder.
-
Grill at 15-20 m minutes on medium temp at the grill.

On the pictures, served as a side with Strip steak, recipe an the meat side.
Black salsify, squash and green peas in lemon flavored butter.
You'll need (4 Portions)
-
1 peeled and sliced black salsify. (you can also use white asparagus)
-
1-2 squashes in slices depending on size
-
Half a cup of green peas
-
Zest and juice from one lemon
-
A hand full of lemon verbena (if you can find this amazing herb)
-
1-2 cold, left over new potatoes in slices (can be left out if you're hard core low carb)
-
Half a cup of melted amazing, fresh butter
-
Salt and white pepper from the grinder

Melt the butter in a pan or a wok. Let the black salsify fry in the butter for 2 minutes before adding squash, green peas and (potatoes) let it fry gently for another two minutes before you finish with salt, pepper, lemon zest and juice.
Enjoy!
Grilled turnip
This is a great tasting side, perfect with grilled fish and meat.
You'll need (4 portions)
1 big turnip och two smaller, 8 ounces (200 grams) per person
Boil in salted water until done. I used a big one and let it simmer for an hour. Cool down in ice water, dry it and cut out the skin. Cut in pieces (see picture) and marinate in a splash of olive oil, a table spoon of paprika powder, zest from one lemon or lime,salt and pepper from the grinder. Finish on the grill a couple of minutes on each side.

Grilled Halloumi cheese
Great tasting side with grilled meats. I served it this time with a nice piece of cow (see pics).
The only thing you need is the cheese cut in triangles, olive oil and a hot grill.
8 ounces (200 grams) is a god size portion. Grill a couple of minutes on each side.

Squash, broccolinis and peas
Great side full, of nutrients and flavor

2-3 squash cut on a mandolin in to spaghetti shapes
-
1 big head of broccoli, in small pieces boiled for 3 minutes and chilled.

1 cup of green peas.
-
1 stick of butter
-
Salt and pepper
-
Melt the butter in your micro wave, ad salt and white pepper. Toss all veggies and microwave it all for a couple of minutes until hot.

Plate as on the picture. Garnished with thin cuts of a red plum to ad some acidity and flavor.
Minute pickled veggies
I love to pickle veggies. Absolutely fastest way to pickle is to use your favorite pickle juice. You probably already have some of it in your cooler. Just use some of that juice, thats what I do most of the times. I use Bubba's pickle juice.
Anyway, here is a recipe I also use.

6 tablespoons of white vinegar
-
Juice from one lemon
-
Half a cup of ice cold water
-
3 tablespoons of Stevia, natural sweetener
-
1 tablespoon salt.
-
Heat 1 third of the water on the stove, and melt sweetener and the salt. Ad all other ingredients
-
Time to pickle the veggies. 30 minutes is enough.

Cauliflower Taboule
This can be a side or a full dish if you want. Can also be used as an ingredient in a salad. One of my family favorites. Inspired by Gwen Paltrow.
You'll need (4 portions)

One small yellow, pink or green head of cauliflower, mixed to smaller pieces in a food processor. See pics

1/4 of a red cabbage head, also mixed as above
-
Juice and zest from 2 lemons
-
3 spring onions in smaller pices
-
Half an English cucumber in cubes
-
1 tbs salt and black pepper from the grinder
-
Half a cup of green organic extra virgin olive oil
-
A hand full of chopped parsley
-
A hand full of chopper cillantro
-
A hand full of chopped mint
-
4 chopped garlic cloves
-
Follow the pictures and blend it all together.
