I just love veggies. The secret is to always cook them to perfection.
What’s worse than an over cooked piece of cauliflower that smells like an old fart? Or what’s better than an amazing piece of buttery, crispy broccoli with a pinch of sea salt from Cyprus?
I love warm veggies as a base instead of the carb alternatives like potatoes, pasta and rice.
The way I prepare them is often just boiled in salted water a short time. Chilled in ice water so they keep nutrients, flavor, color and taste. The n just before I plate them, I just microwave them for 3 minutes in butter.
Truffle roasted cauliflower
1 x cauliflower
Cut in sandwich size
Put on a baking sheet
Flavor with truffle oil, salt and pepper from a grinder, a splash of tiger sauce.
Bake at 500F/275C until it gets color. 8-12 minutes depending on good or not so, oven
